I am becoming an amazing cook! My husband has been surprising me more and more each day with his willingness to try new things with me. We put our heads together and came up with this awesome dinner and if my co-workers are lucky a new pot luck dish.
We used about 2/3 of this 1lbs box of ziti
1lb of sausage
1 medium size onion
Cooked the ziti, drained and let it cool.
cooked about 1/2lbs of frozen corn
sausage and onions cooked in the skillet until the sausage was no longer pink. I cut the onions in large slices because my husband likes the taste of onion but likes to remove them from his meals
drain the sausage and onions and add an 8 ounce can of tomato sauce and 1/2 jar of green chile salsa (I got from my foodie penpal)
Break out the cheese (Mexican style blend)
we cooked the meat, onions, corn, tomato sauce and green chiles together for a few minutes.
Preheat the oven to 350
Place the food in layers in the pan. Ziti first next the meat mixture and finish with cheese. We did this twice.
Cut up one large tomato and add jalapeno slices and salsa if desired once it’s out of the oven.
I think this came out perfect and made the house smell amazing
Can you tell I like jalapenos?
I added salsa to my plate and my husband did without it.
Let me know if you try this one.
***there are easy swaps to make this a healthier version by switching to wheat pasta or using cut up chicken or ground turkey in place of the sausage. Play around with it to make it your own.
