Food, Food and More Food

This weekend kinda flew by.a little too fast for my liking. I’m trying to get into the right mindset to get through the rest of this month and make it to my next vacation (early January). I love taking vacation time at the start of the year. It helps me get through the first few months without trying to use up all my time at work before the summer.

On Friday I stole borrowed my coworkers glasses because they are purple and match my hair

. Don’t I look cute!

This weekend flew by and I forgot to take pictures to show you how the weekend went.no worries though because you did not miss a whole lot. On Saturday I had a good weight workout (bis and tris) and a little cardio thrown in there.

My husband and I tackled some of the Christmas crowd at Target to buy a few things we needed and stockings for the fireplace and a pair of workout plants that are super comfortable. They are a size small. It’s still difficult to see myself at the size I am now. I think I need a bigger size than I really do. I’m kinda worried about the clothes that will be sent to me from pv.body I asked for a size medium for both the top and bottoms. I may have to change that for the next month.

Anyways, today was spent watching football and prepping my meals for the week. I cut up some onions and veggies and added some artisan lettuce to this mixture. I really love the taste of raw vegetables especially the taste of peppers.

One of the best things I do is bag up my portions. It makes things so much easier to just grab and go and is a major time saver for me.

I even bag up my salsa portions.

My food scale is a major necessity in our kitchen and one that even my husband has started using a lot of this year.

I promise to share how the chicken was made later this week with you. I’m not a fan of how this one taste. I need to work out some kinks with this one.

The chicken with onions and red peppers came out perfect. My mouth is watering just looking at this picture.

Sunday dinner! My husband and I make a “special” meal every Sunday that we can both enjoy and not worry much about what’s in it. Tonight we had ground beef with onions and red peppers mixed in it and mashed potatoes with beef gravy and corn. I could not eat it all but it was all so good. Tomorrow morning I am back on my normal plan. I’ve got goals to reach next year. I have to stay focused.

How was your weekend?

When do you take your first full vacation from work once the new year starts?

Do you allow yourself a “special” meal once a week?

Do you weigh your food or just “eyeball it”?

Comments

  1. I always allow myself a treat meal on the weekend. Unfortunately, this weekend consisted of several treat meals! Back on track this morning! :)

  2. Woman, you are a food-portion-packing Queen! I get my healthy eats in to pack for work, but I’m ALWAYS rushing to cut up the stuff before cooking/packing. I need to following your example. It’ll save me so much undue hassle in the morning.

    • I use to be the same way until a friend of mine made me try it. It’s a major time saver and a guarantee that I will stay on track.
